Do you love the soup from The Olive Garden???

The one with the sausage and potatoes??? Well today’s your lucky day because it’s so easy to make!!!

INGREDIENTS and DIRECTIONS

  • 2lbs Italian sausage

  • 1/2 cube of butter

  • 1 whole garlic chopped

  • 2-3 yellow/sweet onions

  • 1 tbsp oregano

  • 1/2 tbsp chili peppers ... or to taste

Melt butter and sauce onions and garlic ... add seasonings and cook sausage all the way through


ADD

  • 3 quarts (cartons) of chicken stock


Let simmer for 3 hours on low


ADD

  • 3-4 slices/cubes potatoes

  • 1 bunch of kale (torn apart)

  • 1 cup 1/2 & 1/2


Let simmer additional hour


Voilà you’re finished!!! All you’re missing is salad, breadsticks with a side of Alfredo for dipping!!! Hey did you know that they actually sell The Olive Garden salad dressing at Walmart?!? It’s actually really good!!!




I personally think this recipe tastes just as good -if not better as the real deal and I love knowing that if I wanted to, I could use lower calorie ingredients and modify this! I totally could use ground turkey sausage, skip the butter and sauté veggies in Pam cooking spray ... go lighter on the potatoes and maybe add some veggies instead ... and use 1% milk versus 1/2 and 1/2 ... It won’t be as rich and flavorful but it’s pretty darn good with half the amount of calories!


Basically this is a fail proof recipe ... even if you’re not a good cook! It’s EASY ... There is very little active time, granted there is a lot of simmering ... but the nice part about that is you literally cannot over cook it - so even if you forget it, you’re still fine!!!


Soup is perfect during the fall ... But it’s one of those recipes you can make in advance ... and then enjoy yourself ... so if you were having a dinner party there’s nothing for you to prep while the guests are there ... yet this is still hearty! Throw some breadsticks in the oven and you look like Martha Stewart!! And it’s amazing as leftovers!!!!
